Nende k\u00f6\u00f6giseiklustega saate mitte ainult nautida p\u00f5nevaid maitseelamusi, vaid ka avastada, kuidas minevik ja t\u00e4nap\u00e4ev kohtuvad kulinaarsete traditsioonide kaudu. Valmistuge avastama unustatud retseptide maailma koos \u201eKogukokkadega\u201c!<\/p>\n<p style=\"text-align: justify;\"><strong>Kulinaarseid katsetusi ERMi arhiivi abil<\/strong><\/p>\n<p style=\"text-align: justify;\">Eesti Rahva Muuseumi arhiivis leidub rohkelt retseptivihikuid, mis toiduhuvilisel lugejal neelud t\u00f6\u00f6le panevad, aeg-ajalt kulmu kortsu t\u00f5mbavad v\u00f5i teinekord ka silmad imestusest suureks ajavad. Otsustasime kogude osakonna k\u00f6\u00f6gitoimkonnaga lugemisest sammu edasi astuda ja m\u00f5ned neist retseptidest, mis meie t\u00e4helepanu enim k\u00f6idavad, ise l\u00e4bi katsetada. Loomulikult lootsime, et valmis produktid l\u00f5puks ikka ka s\u00fc\u00fca s\u00fcnnivad. Kogunesime \u00fchel novembrikuu p\u00e4rastl\u00f5unal kulinaarseks eksperimendiks Tammelinna koduk\u00f6\u00f6ki, et esimesed kolm v\u00e4ljavalitut j\u00e4rele proovida. Valmis kolmek\u00e4iguline \u00f5htus\u00f6\u00f6maaeg, mis koosnes supist, praest ja magustoidust. Saadudud mass laotakse kihiti vaheldumisi kapsalehtedega ahjuvormi. K\u00f5ige peale v\u00f5ikuubikud ja seej\u00e4rel ahju k\u00fcpsema. Meie komisjon kiitis valminud toidu igati heaks ja s\u00f5ime seda isukalt koos keedukartulitega. T\u00f5desime, et tegemist on valmistamisviisi poolest kapsarullide lihtsama retseptivariandiga, ning k\u00f5lasid lubadused seda toitu hiljem kodustelegi valmistada. Selle toidu kasuks r\u00e4\u00e4gib ka mugav serveerimisviis \u2013 l\u00f5ika aga paras t\u00fckk ja aseta taldrikule.<\/p>\n<p style=\"text-align: justify;\"><strong>Peergas<\/strong><\/p>\n<p style=\"text-align: justify;\">Esimeseks k\u00e4iguks sobis H. Rikmani rahvustoitude vihikust (ERM Ak 40:4\/8) p\u00e4rit peergase-nimeline toit.<\/p>\n<p style=\"text-align: justify;\"><a href=\"https:\/\/www.muis.ee\/museaalview\/4190044\">Eesti muuseumide veebiv\u00e4rav \u2013 H. Valmis sooja kodujuustu maitseline piimasupp, mida retsepti autori soovituse j\u00e4rgi k\u00fclma pudru v\u00f5i v\u00f5ileivaga lauale anda. Toit n\u00e4gi v\u00e4lja vanaaegse hapupiima moodi, millel vadak on eraldunud ja piim ujub t\u00fckkidena selle sees. V\u00f5ib-olla mitte niiv\u00e4ga s\u00f6\u00f6ma kutsuva v\u00e4limuse t\u00f5ttu otsustasime retsepti edasi arendada. Kurnasime kohupiimamassi vadaku seest v\u00e4lja, panime uuesti pliidile ja segasime kuumutamise ajal sisse v\u00f5i ja lahti klopitud muna. Valminud soe s\u00f5ir l\u00e4ks kiirelt kaubaks.<\/p>\n<p style=\"text-align: justify;\"><strong>Nuudlivorm<\/strong><\/p>\n<p style=\"text-align: justify;\">Magustoiduks valmis enim umbusku valmistanud nuudlivorm. Kuna toidu valmistamise kirjeldus oli pisut lakooniline, kasutasime endi kujutlusv\u00f5imet ja ladusime ahjuvormi kihiti nuudlid ja \u00f5unad. Iga \u00f5unakihi peale kallasime rohkem suhkrut, kui esiti julgenud oleks, aga m\u00f5nikord tuleb ka retsepti usaldada. Selles ette n\u00e4htud 4 dl suhkrut me vaatamata lahkele k\u00e4ele siiski \u00e4ra kasutada ei suutnud. T\u00f5e huvides tuleb mainida, et \u00e4ra ei kulunud ka k\u00f5ik 600 g nuudleid ja \u00f5unu panime samuti oluliselt rohkem kui retseptis kirjas. Viimaseks kihiks said nuudlid, mille peale valasime nii palju piima, kui vorm v\u00f5imaldas. K\u00f5ige peale l\u00f5ikasime v\u00f5it\u00fckid. Olenevalt vormist tahab toit ahjus k\u00fcpseda 30\u201340 minutit.<\/p>\n<p style=\"text-align: justify;\">Selle roa n\u00e4ol oli vaatamata kahtlasev\u00f5itu koostisosade kombinatsioonile \u2013 kes meist ikka magusat nuudlirooga tihti valmistab \u2013 kindlasti tegemist suurima \u00fcllatajaga. Kuigi toidu proovimiseks tuli m\u00f5nel \u00fcle 24 tunni julgust koguda, sai ahjuvorm l\u00f5puks tilgatumaks t\u00fchjaks. Toitu sobis s\u00fc\u00fca nii k\u00fclmalt kui soojalt ja k\u00fclma piimaga maitses see nagu saiavorm.
