Arusaamad roogade kasulikkusest ja v\u00e4\u00e4rtusest on teisenenud. Nii m\u00f5nelgi juhul on kord hinnatud ja \u00fclistatud toiduaine, n\u00e4iteks suhkur v\u00f5i sool, muutunud hiljem taunituks, ebatervislikuks, l\u00e4inud moest v\u00f5i vajunud lihtsalt unustusse. Kaua aega siinmail k\u00f5ige prestii\u017eikamate ja ihaldusv\u00e4\u00e4rsemate liharoogade staatus on langenud v\u00f5rdeliselt taimetoidu v\u00f5iduk\u00e4iguga. Aga ka vastupidi, m\u00f5nedki kaua tundmatud v\u00f5i alahinnatud toiduained, nagu kartul v\u00f5i kaerahelbed, on aktiivse propaganda ja reklaami tulemusel leidnud keskse koha rahva toidusedelis. Iga ajastu on kujundanud ka oma joogivaliku, suhtumise jookidesse ja joomisesse. N\u00e4iteks keskajal n\u00e4hti viina imettegeva arstimina, samas kui uusajal hakati seda hoopis pidama t\u00f5veallikaks ja r\u00e4\u00e4kima viinakatkust. T\u00e4nap\u00e4eval tervise ja heaolu tagatiseks peetavat rohket veejoomist loeti kesk- ja varauusajal aga puuduse ja vaesuse m\u00e4rgiks.<\/p>\n<p>Ka arusaam piima v\u00e4\u00e4rtusest v\u00f5i ohtlikkusest on nihkunud \u00fchest \u00e4\u00e4rmusest teise. Eesti talupojakultuuris joodi lehmade kesise piimaanni t\u00f5ttu piima v\u00e4he, suurem osa sellest l\u00e4ks v\u00f5itegemiseks. Peamiseks r\u00fc\u00fcpeks oli hapupiim, r\u00f5\u00f5ska piima said eelk\u00f5ige lapsed ja t\u00f5bised. Linnades oli piima maine kuni past\u00f6riseerimistehnoloogia levikuni 19. sajandi l\u00f5pupoolel kahtlane v\u00f5i lausa halb. N\u00e4iteks Karl Ast Rumor on kirjeldanud 20. sajandi algul Tartus saada olevat piima j\u00e4rgmiselt: \u201ePiim oli Tartus alav\u00e4\u00e4rtuslik: m\u00fc\u00fcdi lahtistest n\u00f5udest, vist veega segatult. Ametlikku kontrolli ei teostatud. Passija r\u00e4\u00e4kis, kuidas talle m\u00fc\u00fcdud pool toopi r\u00f5\u00f5ska piima, mille sees ujunud koerakarvad&#8230;\u201d Mingi kontroll piimam\u00fc\u00fcgi \u00fcle siiski oli, kuid ajaleheteated karistatud piimam\u00fc\u00fcjatest (kelle k\u00e4ed olid \u201emustad kui katuset\u00f5rvajal\u201d) ning solgitud kauba t\u00f5ttu ette tulnud m\u00fcrgitusjuhtumitest ei t\u00f5stnud usaldust piima vastu. Madalakvaliteedilise piima kaudu levisid sageli ohtlikud nakkushaigused ja seda nimetati koguni valgeks surmaks.
