Toitu on koos r\u00f5ivaste ja ehitistega nimetatud ka materiaalse kultuuri (sh n\u00f5ukogude etnograafia) kolmeks tugisambaks. ERMi etnograafilises arhiivis (EA) leidub palju soomeugrilaste toidu kirjeldusi, mille aluseks on kohapeal tehtud k\u00fcsitlused v\u00f5i vaatlused.<\/p>\n<p style=\"text-align: justify;\">See blogilugu keskendub aga etnoloogide v\u00e4lit\u00f6\u00f6p\u00e4evikutele, mis pole kirjutatud selleks, et informeerida lugejat mingist kindlast teemast v\u00f5i kultuurivaldkonnast, vaid tuua esile v\u00e4lit\u00f6\u00f6 olustikku, probleeme ja \u00f5nnestumisi. \u00dcldjuhul ei olnud p\u00e4evikud avaldamiseks m\u00f5eldud ja nii talletasid uurijad seal vabamalt oma tundeid ja l\u00e4bielamisi ehk k\u00f5ike seda, mida nad kohapeal n\u00e4gid ja tegid, kogesid. Eriline koht on p\u00e4evikutes kohalikel toitudel ja maitseelamustel, mida saadi k\u00fclast k\u00fclla ja talust tallu k\u00e4ies ning eksponaate kaubeldes.<\/p>\n<p style=\"text-align: justify;\">Tsitaat loo pealkirjas on p\u00e4rit kunagise Tartu \u00dclikooli kolmanda kursuse geograafiatudengi, hilisema ERMi teaduri <strong>Tiia Peedum\u00e4e<\/strong> 1987. aasta <strong>Mordvamaa<\/strong> v\u00e4lit\u00f6\u00f6p\u00e4evikust. Kusjuures noor uurija ei kurda esimesel v\u00e4lit\u00f6\u00f6l mitte kehvade elutingimuste, keeruliste teeolude v\u00f5i keelebarj\u00e4\u00e4ri \u00fcle, nagu tihti saab lugeda reisip\u00e4evikutest, vaid toiduelamuse p\u00e4rast \u00fches k\u00fclalislahkes peres: <em>Meile pakuti putru \u201emordva moodi\u201c. Pudrus oli paksult sibulat ja mina, kes ma mugulsibulat suhugi ei v\u00f5ta, pidin lausa iga suut\u00e4iega end \u00fcletama. J\u00e4rgi j\u00e4tta ei julgenud,<\/em> <em>pole ju viisakas, \u00e4kki panevad pahaks.<\/em> <em>Muidu oli puder p\u00e4ris hea maitsega. Kodune lehmapiim maitses k\u00fcll k\u00f5igile.<\/em>\u201c (Tiia Peedum\u00e4e 1987, TAp 838)<\/p>\n<p style=\"text-align: justify;\">Sedalaadi m\u00e4rkmeid s\u00f6\u00f6kidest ja jookidest, mille maitse oli harjumatu v\u00f5i isegi vastuv\u00f5etamatu, kuid millest ei saanud v\u00f5\u00f5rsil olles keelduda, leidub ka teiste etnoloogide p\u00e4evikutes. Rohkem on siiski kirjeldusi \u00fcsna tavalistest argip\u00e4evas\u00f6\u00f6kidest, mis uurijatele h\u00e4sti maitsesid.<\/p>\n<p style=\"text-align: justify;\">L\u00e4bivaks jooneks on paljudes reisikirjades soomeugrilaste k\u00fclalislahkus, mis v\u00e4ljendus selles, et uurijaid, kes ilmusid ootamatult kellegi ukse taha, kutsuti ikka ka s\u00f6\u00f6gilauda. Aegam\u00f6\u00f6da muutusid aga p\u00e4eva jooksul saadud toidu- ja joogipoolise kogused raskesti talutavaks ning isegi k\u00fclalislahkus muutus reisi l\u00f5puks \u201ekuidagi v\u00e4sitavaks\u201c. (Tiina Taela 1991. a Udmurdi p\u00e4evik, TAp 881)<\/p>\n<p style=\"text-align: justify;\">Siin on m\u00f5ned nopped soomeugrilaste argistest ja pidulikest s\u00f6\u00f6kidest, mida nad eestlastele pakkusid. Peres pakutavat igap\u00e4evast toitu nimetati \u00fcldiselt teejoomiseks, k\u00f5ik muu k\u00e4is selle k\u00f5rvale. Mida head ja paremat aga k\u00fclalistele pakuti?<\/p>\n<p style=\"text-align: justify;\"><strong>Aino Voolmaa<\/strong> 1962. aasta <strong>Vepsamaa<\/strong> matkap\u00e4evikust loeme:<\/p>\n<p style=\"text-align: justify;\"><em>6.VII. Terve p\u00e4eva istusin Kurganovite juures ja joonistasin \u2013 k\u00e4ter\u00e4ti- ja s\u00e4rgikirju. \/\u2026\/ Oli vihmane ilm, nii et Kurganovite juures t\u00f6\u00f6tamine oli v\u00e4ga konti m\u00f6\u00f6da. Seal pakuti koguni 2 x teed. Esimene kord koguni veel bor\u0161i ja mingeid toredaid h\u00f5rgutisi, <\/em>pirgaid<em> \u2013 \u00f5hukest taignast v\u00f5i sees keedetud pirukakujulisi k\u00fcpsiseid. <\/em><\/p>\n<p style=\"text-align: justify;\"><em>11.VII. Hommikul sai t\u00e4itsa aktiivseid samme astutud toidumajanduse olukorra parandamiseks. S\u00f6\u00f6kla toit ja teevesi, mida siinsetes peredes v\u00e4ga lahkesti pakutakse, oli kogu olemisele j\u00e4tnud siin seesuguse \u00f5\u00f5nsa tunde, et kui selline olukord edasi kestab, siis \u00e4hvardab vaimne ja f\u00fc\u00fcsiline kokkuvarisemine. \u00dcldiselt peab \u00fctlema, et siinne rahvas on k\u00fcll v\u00e4ga lahke, isegi erakordselt lahke v\u00f5rreldes meie eestlastega, kuid paistab, et nende s\u00f6\u00f6gisedel on tunduvalt kehvem meie rahva omast. Samovar pannakse \u00fcles kohe, kui majja minna, kuid paistab, et teevesi ongi nende peatoit, sinna juurde tursk ja leib. P\u00fchadeks k\u00fcpsetatakse <\/em>kalitkasid<em>, pirukaid mille peale k\u00e4ib hirsi, odratangu, kartulipuder, ka kamapuder v\u00f5i kohupiim. Aedviljadest kasvatatakse ainult kartulid, sigu ei peeta. Lehma pole k\u00f5igil ja ka kitse mitte.<\/em><\/p>\n<p style=\"text-align: justify;\"><em>L\u00e4ksime siis koos Mariann Tuhkaneniga (V kurs. \u00fcli\u00f5pilane, kes \u00f5petas muuseumirahvast soome keelt r\u00e4\u00e4kima) poodi ja ostsime kumbki suure purgi Moldaavia ploomikompotti, sinna veel lisaks purgi (v\u00e4ikese) hernesuppi. Kui selle \u00e4ra s\u00f5in, oli p\u00e4ris kindel tunne, Mariann r\u00e4\u00e4kis sama juttu. <\/em>(Aino Voolmaa 1962, TAp 534)<\/p>\n<p style=\"text-align: justify;\">P\u00e4evikutes nimetatud pirukate kohta leiab andmed ka etnograafilisest arhiivist:<\/p>\n<p style=\"text-align: justify;\"><em>Eriti maiusroaks on aga v\u00e4ikesed \u00f5hukesed saiataignast suhkrut\u00e4idisega v\u00f5is keedetud pirukakesed <\/em>[pirg, pirgad].<em> Varem oli komme kosjade puhul kostitada nendega kosilast. Ka n\u00fc\u00fcd valmistatakse neid eriti t\u00e4htsateks puhkudeks. <\/em>(Aino Voolmaa 1962, EA 97, lk 117<em>\u2013<\/em>118)<\/p>\n<p style=\"text-align: justify;\"><em>Pidulikuks toiduks on <\/em>kalitkad [kalitk, kalitkad],<em> meenutavad meie mulgikorpe. Nimelt \u00f5hukeseks voolitud saia- v\u00f5i sepikujahust \u00fcmarale taignale pannakse t\u00e4iteks kas kartuliputru, kohupiima, hirsi- v\u00f5i odratanguputru, lisatakse koort ja m\u00e4\u00e4ritakse pealt v\u00f5i v\u00f5i margariiniga ja k\u00fcpsetatakse ahjus pannil. S\u00fc\u00fcakse kuumalt, kuid ka k\u00fclmalt. <\/em>Kalitkasid<em> k\u00fcpsetatakse p\u00fchap\u00e4evadeks ja \u00fcldse pidulikeks puhkudeks, kuid s\u00fc\u00fcakse ka n\u00e4dala sees.<\/em> (Samas,\u00a0 lk 116\u2013117)<\/p>\n<p style=\"text-align: justify;\">Mare Piho kirjutab 1989. aastal <strong>Isurimaal<\/strong>:<\/p>\n<p style=\"text-align: justify;\"><em>Pirukaid k\u00fcpsetatakse v\u00e4ga tihti. Igal laup\u00e4eval ja p\u00fchap\u00e4eval peab pirukas laual olema. Suvel on marjapirukad. S\u00fcgisel ja talvel kapsa-, porgandi-, peedi-, \u00f5una- ja kalapirukad. Maitsvam on porgandipirukas,<\/em> porkannalaadikat. ERM Fk 2327:163<\/p><\/div>\n<p style=\"text-align: justify;\">ERMi teadur Piret Koosa, kes on p\u00f5hjalikult uurinud eesti etnoloogide komi p\u00e4evikuid ning osalenud alates 2000. aastate algusest mitmel v\u00e4lit\u00f6\u00f6l Komimaal ja Marimaal, on kirjutanud: <em>Ekspeditsioonip\u00e4evikute p\u00f5hjal tundub, et \u00fcldjuhul s\u00f5bralik vastuv\u00f5tt on midagi, mis k\u00f5igile eri aastak\u00fcmneil komisid k\u00fclastanutele silma on j\u00e4\u00e4nud. Juba esimesed kohtumised komidega j\u00e4tsid ka mulle neist mulje kui v\u00e4ga k\u00fclalislahketest inimestest. Seda omadust peetakse endi puhul ka t\u00e4iesti teadlikult oluliseks. Selle k\u00f5ige tavalisemaks ilmnemiseks on k\u00fclaliste rikkalik kostitamine maitsvate roogadega mitmek\u00e4iguliste einete k\u00e4igus. Udmurdimaale korraldati enam kui 20 ekspeditsiooni, viimati k\u00e4is seal ERMi uurimisgrupp 2010. aastal.<\/p>\n<p style=\"text-align: justify;\">Udmurdi argip\u00e4eva toitude kohta loeme<strong> Kalju Konsini<\/strong> 1973. aasta p\u00e4evikust:<\/p>\n<p style=\"text-align: justify;\"><em>L\u00f5unas\u00f6\u00f6k serveeritakse kell 13.00. Kohaliku kombe kohaselt s\u00fc\u00fcakse \u00fchistest kaussidest. Maitsev kapsa- ja kartulisupp, r\u00f5\u00f5sa koorega \u00fclekallatud sibulapealsed ja kurgil\u00f5igud, hapupiim ja hobuseliha (selles sain teada alles hiljem) kantakse lauale. <\/em><\/p>\n<p style=\"text-align: justify;\"><em>Laup\u00e4ev, 25. august. Kuna aeg on nihkunud l\u00f5unasse, siis pannakse lauale aurav samovar, toidu\u00f5liga \u00fcle kallatud seened, kurgil\u00f5igud, tomatid, \u00f5unamoos ja leib, k\u00f5igel sellel lasin hea maitsta.<\/em> (Kalju Konsin 1973, TAp 633)<\/p>\n<p style=\"text-align: justify;\"><strong>Jana Reidla<\/strong> on Marimaa udmurtide juures 1989. aastal kirjutanud:<\/p>\n<p style=\"text-align: justify;\"><em>Kell neli oli eriliselt maitsev s\u00f6\u00f6giaeg \u041a\u0443\u0448\u043a\u0435\u0442\u2019i koolimaja s\u00f6\u00f6klas. Meisterkokkadeks olid olnud Olga ja Eleanora. Supp oli ilmselt merikapsaga, kartulid gulja\u0161iga. Meile oli eraldatud 12 kg liha \u2192 st. 1 kg igale. Piima lubati 10 l. p\u00e4evaks.<\/em> (Jana Reidla 1989, TAp 863)<\/p>\n<p style=\"text-align: justify;\"><strong>Tiina Taela<\/strong> 1991. aasta reisip\u00e4evikust: <em>Vaevalt t\u00e4navale p\u00e4\u00e4senud, kutsuti meid \u00fcleaedsete poole. Silmapilk t\u00e4itus laud s\u00f6\u00f6gi ja joogiga, ka otse loomulikult kum\u00f5\u0161kaga. \/&#8230;\/ Selline teelaud ootamatutele k\u00fclalistele on siin k\u00fclades sarnane ja v\u00e4ga universaalne nagu hiljem selgub: omavalmistatud leib, koduv\u00f5i, moosid, mesi, v\u00e4rske ja hapupiim (valmistamine: piim aetakse keema, sellele lisatakse spl. hapukoort, sellest tuleb koorest paksem mass, s\u00fc\u00fcakse k\u00fclmalt ja lusikaga). K\u00f5ik on v\u00e4ga lihtne, kuid sellegipoolest annab ettekujutuse k\u00fcllusest ja k\u00fclalislahkusest. <\/em><em>\/\u2026\/ <\/em><\/p>\n<p style=\"text-align: justify;\"><em>\u00dcldse paistis, et Varklet-Bodjas <\/em>[Tatarstani Agr\u00f5zi rajoon]<em> toitutakse \u00fchetaoliselt, lihtsalt ja samas h\u00e4sti. S\u00fc\u00fcakse seda, mis endal on v\u00f5imalik valmistada. Poe peale loota ei saanud, sest esiteks polnud seal midagi ja kuna see enamasti t\u00fchi seisis, siis olid ka poeuksed valdavalt suletud. Kui leivak\u00e4ru toodi, siis ronis m\u00fc\u00fcja otse k\u00e4rru ning m\u00fc\u00fcs leiba otse sealt, pool tundi ja kogu lugu. Juhtusime k\u00fclas heal ajal olema, juba oli v\u00e4rsket k\u00f6\u00f6givilja, rohkesti marju, tehtud oli v\u00e4rskeid moose, mesi oli alati toidulaual. Piima, v\u00f5id, liha andis oma majapidamine, kodus tehti ka leiba<\/em>. Erandiks on <strong>Aleksei Peterson<\/strong>, kes korraldas v\u00e4lit\u00f6id nii vepsa, komi, mari kui ka udmurdi aladel. Tema 1981. udmurdi p\u00e4evikust saame lugeda:<\/p>\n<p style=\"text-align: justify;\"><em>See huvitav roog <\/em>[udmurdi keeles \u0161anga, perepet\u0161]<em> on levinud vepslastest peale kuni Udmurdimaani v\u00e4lja. Kes selle leiutas? Kus ta veel levinud on, praegu ei oska \u00f6elda. Tehakse lihtsalt: rukkitainas (ka uuemal ajal nisujahust), sellest rulliga tehakse \u00f5hukesed alused, mille sisse pannakse kas kartuliputru v\u00f5i ka muud. Keeratakse taignast aluse \u00e4\u00e4red \u00fcles ja nii saadakse \u00fcmmargused lamedad koogid. Soojalt on need v\u00e4ga head, n-\u00f6 s\u00f6\u00f6 v\u00f5i ise.
