ERMi jaoks on oluline t\u00f5sta esile ka kultuurilist l\u00e4hedust, mis m\u00f5nes valdkonnas \u2013 n\u00e4iteks toidus \u2013 on eriti silmapaistev. 27.-28. aprillil toimus muuseumis seminar \u201dJuust ja toidup\u00e4rand L\u00e4tis ja Eestis\u201d, mille korraldas meie teadusosakonna toidukultuuri t\u00f6\u00f6grupp koost\u00f6\u00f6s Tartu \u00dclikooli etnoloogia \u00f5ppetooli ja L\u00e4ti Instituudiga. Juust on nii Eesti kui ka L\u00e4ti toiduajaloos \u00fcks p\u00f5nevamaid teemasid, sest siin p\u00f5imuvad kultuurim\u00f5jud nii idast kui ka l\u00e4\u00e4nest, nii linnast, m\u00f5isast kui ka talust. Seminari eesm\u00e4rgiks oli v\u00f5rdlevalt vaadelda juustu rolli m\u00f5lemal maal l\u00e4bi ajaloo nii tehnoloogilisest kui ka kulinaarsest aspektist, samuti arutleda toidup\u00e4randi rolli \u00fcle t\u00e4nap\u00e4eval.<\/p>\n<p style=\"text-align: justify;\">2017. aasta algusest on ERM lisaks akadeemilist laadi toidu-uurimisele teinud tootearenduse alast koost\u00f6\u00f6d toidup\u00e4randit arendavate organisatsioonide ja v\u00e4ikeettev\u00f5tjatega. Sellegi seminari idee kasvas v\u00e4lja mullus\u00fcgisesest rahvusvahelisest toidup\u00e4randit\u00f6\u00f6toast, kus mitmed juustutootjad teema vastu huvi ilmutasid. Viimasel k\u00fcmnendil on just v\u00e4ikeste juustumeistrite hulk ja t\u00e4nu sellele ka p\u00f5nevate juustude valik mitmekordistunud. Sama v\u00f5ib \u00f6elda ka L\u00e4ti kohta, kuid seal ollakse sammu v\u00f5rra eeski, sest olemas on juustutootjaid \u00fchendav klubi, mis teeb aktiivset promot\u00f6\u00f6d.Samuti on nende jaanijuust 2015. aastast kaitstud EL traditsioonilise toote t\u00e4hisega.<\/p>\n<p style=\"text-align: justify;\">Seminarip\u00e4eva ettekannetest puudutasid ajaloo poolt L\u00e4ti RISEBA \u00fclikooli teaduri ja L\u00e4ti Instituudi kommunikatsioonispetsialisti Astra Spalvena \u201dJuust 20. sajandi L\u00e4ti toidukultuuris\u201d, Tallinna \u00dclikooli vanemteaduri Inna J\u00fcrjo \u201dJuustust Eesti toidukultuuris kesk- ja varauusajal\u201d ning Anu J\u00e4rsi, Anu Kannikese ja Ester Bardone \u201dJuust Eesti 19.-20. sajandi toidukultuuris\u201d. Saime kuulda p\u00f5nevaid fakte juustu vanemast ajaloost: muuhulgas seda, et arheoloogiliste leidude seas on 11. sajandist p\u00e4rit juustun\u00f5u, Tallinna dominiiklaste kloostris s\u00f5i iga vend aastas \u00e4ra 3 kilo juustu ning juustu imporditi Eestisse juba keskajal. Juustu tavatseti serveerida koos v\u00f5iga, samas manitseti seda m\u00f5\u00f5dukalt tarbima. Foto: Anu Kannike<\/p><\/div>\n<p style=\"text-align: justify;\">Astra Spalvena ettekandest ilmnes, et ka L\u00e4tis on juustu juured s\u00fcgaval ajaloos \u2013 n\u00e4iteks on teada, et 13. sajandi l\u00f5pus on sakslased sealt r\u00f6\u00f6vinud 5 t\u00fcnni juustu. Kuramaa hertsogi Jakob Kettleri (1610\u20131682) \u00f5ukonnas oli juba suur hulk juustuvalmistajaid. Nii Eesti kui ka L\u00e4ti piimamajandus sai uue hoo 19. sajandi l\u00f5pul seoses t\u00f5uaretuse ja karjanduse moderniseerumisega, suure panuse andsid P\u00f5hja-Saksamaalt, Hollandist ja Taanist tulnud juustumeistrid. 20. sajandi algul j\u00f5uti m\u00f5lemal pool keskmeiereide loomiseni, kuigi L\u00e4tis oli see protsess m\u00f5nev\u00f5rra kiirem. Iseseisvates vabariikides oli suuremamahulisem k\u00fcll v\u00f5itootmine ja -eksport, kuid ka juustutootmine kasvas kiiresti, eriti 1930. aastate teisel poolel. Eestis oli selles m\u00e4\u00e4rav roll \u00d5isu Piimandusinstituudil, mis tegeles aktiivselt ka juustu kui tervisliku toidu propageerimisega. Foto: Anu Kannike<\/p><\/div>\n<p style=\"text-align: justify;\">20. sajandist ja t\u00e4nap\u00e4evast r\u00e4\u00e4kides tuli sarnasuste k\u00f5rval ilmsiks see, kuidas poliitilised piirit\u00f5mbamised tekitavad ka uusi ja kummalisi eraldusjooni toidukultuuriliselt \u00fchte kuuluvatel aladel. S\u00f5ira n\u00e4ide on selles osas eriti ilmekas, sellest kirjutab tabavalt meie hea koost\u00f6\u00f6partner \u00dclle Jukk oma <a href=\"http:\/\/peenrarott.blogspot.com.ee\/2018\/04\/vana-hea-soir-ja-soda-umber-soira.html\">blogis<\/a>. Igatahes K\u00fclli Eichenbaumi ettekandest ilmnes, et t\u00e4nasel V\u00f5rumaal on s\u00f5iravalmistamise kunst elus ja terve ning s\u00f5ir hinnatud piduroog, mis kantud ka meie vaimse kultuurip\u00e4randi nimistusse. Vana-V\u00f5rumaa ja Setumaa s\u00f5irale taodeldakse EL kaitstud geograafilist t\u00e4hist.<\/p>\n<p style=\"text-align: justify;\">L\u00e4ti P\u00f5llumajandusministeeriumi ekspert Ginta Dzerkale tutvustas sealseid toidukvaliteedi skeeme ja vastavaid Euroopa Liidu ning kohalikke toidut\u00e4hiseid, mis annavad toodetele tarbija silmis olulist lisav\u00e4\u00e4rtust ning v\u00f5imaldavad ka tootjatel lisatoetusi taodelda. L\u00e4ti Juustuklubi n\u00f5ukogu esinaine Vanda Davidanova andis v\u00e4rvika \u00fclevaate klubi \u00fcliaktiivsest tegevusest juustukultuuri edendamisel. L\u00e4tis on praegu turul umbes sada kohalikku juustusorti ja t\u00e4nu t\u00f5husale turundusele on juustutarbimine t\u00f5usnud 4 kilolt 2002. aastal 19 kilole 2017. aastal. Igal aastal toimuvad Latgales Rezeknes suured juustupidustused, lisaks tavap\u00e4rastele tooteesitlustele korraldatakse ka n\u00e4iteks juustutortide konkurssi, juustust inspireeritud moeriiete demonstratsioone, juusturatta veeretamise v\u00f5istlusi, juustumaalide ja juustust valmistatud installatsioonide ja skulptuuride n\u00e4itusi ning palju muud. Klubi on veendunud, et just m\u00e4ngulised ettev\u00f5tmised ongi juustu populaarsust kasvatanud. Samas antakse v\u00e4lja ka tutvustavaid publikatsioone uurimustest lasteraamatuteni.<\/p>\n<p style=\"text-align: justify;\">P\u00e4rast seminari ettekannete ja diskussiooni osa said osalejad juustu ka maitsta: oma tooteid tutvustasid Metsavenna talu s\u00f5iratootja Meelis M\u00f5ttus, Kolotsi kitsejuustutalu peremees Mart Leibur ja Alutaguse hallitusjuustude tootja Triinu Arm.
